We cook the weather.
The mist comes off the water at dusk and sits on the Sierra Blanca until the fire is lit. That hour decides the menu — not a printed card written three months ago.
There is one seating. The kitchen buys what the boats at La Bajadilla landed that morning and what the Ronda growers cut that week, and then it stops buying. When the last plate leaves, the night is finished.
Everything meets encina — holm oak, cut above Istán, burned down to white ash before a single thing touches the grill. It is a slower way to cook and a harder one to staff, and it is the only reason this room exists.
Aurelio Sanz-Prieto, kitchen
Six plates, most nights.
The list below is what left the pass yesterday. Tomorrow it will be three-quarters the same and one-quarter whatever the boats bring.
“You eat facing the water because the water is the reason any of this is here.”
The room holds twenty-eight.
One long table of lime-washed pine, six two-tops along the rail, and the fire close enough that you will smell it in your coat tomorrow.

Ask for a table.
We answer every request by hand, usually the same evening. If the night you want is full we will say so plainly rather than seat you badly.
